Meatless Meals During the Month Of March
The tastiest {and most alliterative} month of yet ;)
We had another great month of Meatless Mondays this March; here's how they played out:
March Week 1: We enjoyed Light Fettuccini Alfredo via Jaclyn of Cooking Classy. This was surprisingly easy to make, and it was really tasty. The combination of Neufchatel and Parmesan cheeses made a rich, smooth sauce, and it was a hit with everyone, even the kiddos! I paired it with a whole-grain baguette, and everyone's bellies were happy.
March Week 2: I loved Ruth's recipe for Easy Eggplant Parmesan via Living Well Spending Less. I switched it up a little--the main difference I made was using coconut oil to saute the eggplant. Also, I only used 2 eggplants instead of the 3 that the recipe called for; I had PLENTY leftover for dinner the next day (we made Eggplant Parm Subs out of it!) and I still had a whole dish to put in the freezer for later.
March Week 3: Speaking of leftovers, I also got a ton of mileage out of this delicious dish: Quinoa Wrap with Black Beans, Feta, and Avocado via Marian Mama Cooks. Instead of me assembling the wraps for everyone, I dished out all the ingredients separately and let everyone make their own (that way I could avoid the "I don't like such-and-such" whines). Also, I find that the kids are more likely to try new foods when they're given the choice to make for themselves, instead of me "expecting" them to eat it. :) And somehow I didn't mention this yet, but OMG these were awesome, and the leftovers gave me the best lunches for the next two days!
March Week 4: Penne with Roasted Cauliflower and Lemon Caper Vinaigrette from Two Peas and Their Pod was our choice for this week! We've been noticing all different colors of cauliflower at Whole Foods, so the girls picked an orange variety for this meal. The roasted veggies had a great texture, and the lemon caper sauce had a sweetness I didn't expect... and to my great surprise, Ben said, "... it just may be my favorite Meatless Monday yet." Only bad news on this one: not enough leftover for my lunch tomorrow ;)
