Looking to Kick Up Your Nutrient Intake?
This easy juicer recipe boosts lots of vitamin C and fiber
I love starting my morning with fresh vegetable and fruit juice (made in my juice extractor), and I've been having a lot of fun experimenting with different recipes. I'm calling this one the Cleansing Vitamin C Mix, and it's jam-packed with all sorts of healthy nutrients. I figured if I'm enjoying my daily fresh juice adventures, I should share the love!
One of my favorite things about juicing is the fact that, while I have the best intentions, I would never consume so many healthy veggies in the course of a normal day. Juicing allows me to take full advantage of all the powerful benefits of foods I wouldn't ordinarily be eating. Plus, it's SO easy!
Cleansing Vitamin C Mix: Juicing Recipe
This hydrating combo is packed with vitamin C, fiber, carotenes, and more!Ingredients for 1 serving:
- 1/2 medium beet
- 3 carrots
- 2 small apples
- 2 cabbage leaves
- 3 leaves red kale
- 1 mini cucumber
- 2 stalks bok choy
- 1 inch ginger
- 1/2 lemon
Be sure to follow your juicer's instructions about how to prepare the produce and feed it into the machine (for instance, my machine allows me to leave the peels on everything except the lemon; also, you may need roll up the leafy greens before feeding them in).
If you're new to juicing, you may balk at the number of veggies in this recipe, but I find that when I balance them out with some fruit and ginger, it takes away the "earthy" taste that can sometimes result (especially when I've got cabbage in the mix).
